Review

For home, these are way nicer than you'll find in most high end restaurants. They are very well finished, balanced, and cut through steaks with precision. If you've been to Outback Steakhouse, they are about 1/2 of the size and weight of their restaurant steak knives.



Look at the "Pro Series" of Wusthof knives for possibly the best deal in a matching, well-balanced set of cast knives. They've been the "house knives" in many restaurants and recently made available to home consumers. The handles are rubberized with safety grips. I bought nine different Pro Series knives with the classic steak knives and a 35-slot cherry Wusthof wood block. I couldn't be more pleased with the affordable combined quality. The 10 inch Wusthof ceramic "steels" work best for fine sharpening cast blades by using a 20 degree or less angle. That angle is about half or less of this large letter "V". It simply takes longer to sharpen forged blades.



The main difference in forged and cast is how long they hold an edge. It only takes 5-6 swipes on both sides to renew the factory edge to cast blades with the ceramic "steel". I figured if busy restaurant chefs can stop for a moment for a few sharpening swipes, I could live with it at home, and much better afford the bigger Wusthof set of the exact knives I preferred. The ceramic sharpener also looks and sounds cool in a home kitchen environment to guests. These are a huge improvement over most of my older Chicago Cutlery set that found a new home in my workshop. The other Chicago Cultery knives I kept in the kitchen fit very well into the Wusthof block.
