Chinese chef's cleavers are somewhat a mistranslation, as they are not true cleavers. It is actually used for as a slicer and chopper. Much like a French chef's knife or a Japanese Santoku bocho, a Chinese chef's cleaver is an all-purpose knife with a medium blade. It is known as "vegetable knife" to Chinese. This is not a thin blade slicer, nor a thick blade meat cleaver. Chinese chef's knife sits between the Chinese slicer and the Chinese cleaver. It is not designed for hacking through big bones, though thin chicken bones are acceptable.



I bought this knife on March 2009. Dexter-Russell Chinese chef's knives are highly regarded among Chinese chefs in America. This particular model S5198 is the best selling of them. Its blade is 8 inch in length and 3.25 inch in width. It spine is 3/32 inch thick, which is 1/32 inch thicker than my previous Sekizo Chinese chef's cleaver. The thicker spine gives the knife a sturdier feel and a heavier chop (some people like this, some don't) The 3-1/4 inch walnut wood handle is nice. A wood handle is warmer to hold and allows a non-slip grip compared to a steel or plastic handle. I oiled the handle with tung oil to prevent it from absorbing too much water. The tang extends 40% into the walnut wood handle and can stand up to 500 pounds of pull. According to customer service, this Dexter-Russell S5198 is constructed out of 420 stainless steel and harden to Rockwell 54-56 HRC. I have a feeling that this knife is made of 420HC and not the normal 420. 55 HRC is normal for kitchen knives, but soft comparing to hard steel Japanese knives, like Shun or Hattori cutlery. For a given steel, there is a trade-off between strength and toughness. A very hard knife is resistance to low level impact, but will chip/crack when the force is great. A softer and tougher knife tends to give and have its edge roll up easier, but has greater resistance against chipping and cracking. As Chad Ward pointed out, "The most extreme examples of both would be the extremely hard, yet shatter-prone ceramic knives from Kyocera compared to very tough, soft stainless Chinese cleavers". Chinese chef's cleavers often are made out of softer and tougher stainless steel due to their all-purpose function. This is a stamped knife with no bolster, finished with a saber grind profile. I ground mine with a 15o back bevel and a 20o on the edge face. Finally, this knife is made in USA by Dexter-Russell, the largest and oldest American cutlery manufacturer. I rate this Chinese chef's cleaver between a 4-star score and a 5-star score. I am quiet happy with this knife and it is certainly a fine cutlery for its $30-40 price, so it deserves at least a 4-star rating. I am just not sure if it is exceptionally great given its 420HC stainless steel grade is rather common.



I have now moved toward the Chan Chi Kee (CCK) thin blade chef's knife due to its thinness.

Some of you probably are Chinese cleaver veterans, but for those of you who are not, here are some suggestions for holding a Chinese chef's cleaver. It is a pinch grip just like a French chef's knife. Hold your knife with your dominant hand. Have your thumb and index finger hold on the spine (slightly passed the bolster section), while the other three fingers wrap around the handle. Alternatively, have the thumb, index and middle fingers on the spine, and hold the handle with ring and little fingers. Both grips are acceptable. Hold your foods with your other hand with your fingers tips curl inward, allowing your minor knuckles or your joints exposed. Lean the side of the cleaver blade against your knuckles or your joints and you are good to chop, cut and slice, but never lift the blade edge above the knuckles/joints. In other words, your knuckles/joints will guide your cutting motion and preventing you from cutting yourself. I have uploaded a photo of this in this review.

Review

An inexpensive utility knife suitable for light cutting jobs. I have used it to cut meats, poultry, vegetables, and fruits. The blade is quite thin, so it's easy to hone and sharpen. It holds an edge quite well. Great sidekick to a sturdy chef's knife; when you don't want to pull out the larger knives, and the parer is just too small.

We use this knife for everything despite having other excellent knives. It may be short but we use it for cutting bread, carving meat, eating a steak, chopping tomatoes... Sharp and sturdy. No bending. Nice grip.

Review

I lost one of my Cutco knives so I decided to purchase this. The Rada is nearly just as good as a Cutco. It's extremely sharp and cuts through meat with ease. You could cut yourself very badly with this so be careful and don't let your little kids eat with it. It needs to be hand washed every time so don't put it in the dishwasher. Only downside is the handle feels cheap. Overall, I am happy with this knife and I will be buying more Rada knives in the near future.

We admit to being a little partial to Henckels cutlery and have wanted a 5" utility knife for some time for dicing green peppers, fine-slicing onions, and similar tasks. This item has a great smooth feel in the hand, with enough heft in the handle, and enough length on the blade, to provide excellent precision in whatever your smaller cutting tasks might be. "Sharp" goes without saying and our prior experience with Henckels serrated edges leads us to believe the knife might well outlast its owner!

We feel the price paid, especially compared to the Henckels Pro, 4-and-5-star models, was a fine deal and we are so completely satisfied, we highly recommend this outstanding piece of cutlery!

These are the knives that Subway uses. They can slice through bread with no problem. When they got dull for bread, we would move them down the line to slice through tomatoes and other veggies with no problem. Still have one 12 years later (never sharpened once) and it is still the best knife in the drawer. They really have a 70's color inspiration to them if you can get past that. This knife ruined me on other knives, and now that I have found them again, I will not buy another knife.

I have had these for a few years. After the first year one of the tips broke off. A couple of years later another tip broke off, this time cutting an apple.



I don't have the warranty to know where to return these to, so I am stuck with them, but seriously I just want some better knives rather than paying to ship the bad ones somewhere and wait for a possible refund.



Even through I prefer Wustof to Henkels on the high end stuff, we have a cheap set of Henkels stamped steak knives that seem more sturdy and cut better than these.

Bought these knives for my husband for Christmas. What a disappointment. Sadly, he's really good at grabbing all the boxes and stuffing them in the recycle bin before we have a chance to decide if we like something or if it should be returned. If I could return these I would, but, no packaging. Here's what's bad - the knives are light and not very well balanced. When you hold it, there is no feel like it's a good, quality knife. We have a few other Henckel knives that were not made in China, and they are great and feel very solid. These feel chintzy. Here's what's really bad - after a few uses, they are not very sharp. Even worse, they are covered in rust stains, and you can see spots on the blade where the steel has imperfections, and the rust is festering. We don't put them in the dishwasher, or even allow them to soak in dishwater. We, OK, I hand wash and dry them and even allow them to continue to air dry before returning them to their knife block. The other thing is that the paring knives are very wide, so they are not terribly maneuverable. Like I said, if I could return them I would. Save your money.

My new favorite knife manufacturer! I bought the Global 7" vegetable knife after using the smaller 5 1/2" vegetable knife for six or eight months. The balance and dimpled grip works well for me. The shape of the blade is somewhat similar to a Chinese Chef knife and I find both of the Global Vegetable Knives to be great all purpose knives. Caution, these knives are so sharp that I have to use care not to choke up on the handle and accidently nick my index finger on the heel of the blade. Just a reminder to practice good knife skills and not be careless with these fine blades. They are clean and practical with their beautiful one piece stainless design and it is fun to see them in the hands of celebrity chefs on the Food Network from time to time. Although Global is in the upper half of the cuttlery price range, I think that they are a good value. We live in our kitchen and love expanding our culinary expertise so it is a pleasure to have quality tools.
