Product Description

Size: 6" flexible blade The thin and narrow yet flexible blade of this knife makes it perfect for working around the delicate bone structures of small fowl, such as squab. Unlike many other boning knives, this one has a full bolster so your cutting hand is protected as you work. Part of the Classic series, the knife represents two centuries of unexcelled Wusthof craftsmanship. Like other cutlery in the series, it's hand-forged from a single piece of stainless steel for maximum strength; the hand-polished blade is exactingly calibrated to be hard enough to resist dulling yet soft enough to take a keen edge when it's honed or sharpened. Dishwasher-safe and with a traditionally shaped, ergonomically designed handle that is triple-riveted for durability, this knife brings a guaranteed lifetime of low-maintenance cutting to any cook who owns it. From the Manufacturer In the culinary world variety and preparing something outstanding is the key to success. Due to this, Wusthof offers more than 350 different kinds of knives to be able to provide the perfect knife for everyone. The latest cutting performance tests carried out by the FGW (Forschungsgemeinschaft Werkzeuge und Werkstoffe e.V., a German research association for tools and materials based in Remscheid) confirm that Wusthof forged knives offer the best quality when compared to other well-known, single-layer brands. The extensive tests were carried out in accordance with DIN EN ISO 8442-5. Wusthof knives have a considerably higher ICP (Initial Cutting Performance) and maintain this performance for an extremely long time (TCC = Total Card Cut). When compared with the winners in the "cook's knife" category awarded by German consumer organization "Stiftung Warentest" in its 1st edition of 2008, forged Wusthof knives featuring the new PEtec technology produce a result which is about 20% higher. The Technology: Blades are measured by a laser before sharpening Computer programs calculate precise sharpening angle for each blade Knives are then sharpened on a whetstone using precision robots Knives are given a final polish using a special disc The Benefits: Extremely high initial cutting performance Exceptionally long edge retention / long service life of blade Optimum cutting edge along the entire length of the blade Unique, consistently high and reproducible quality PEtec from Wusthof--superior sharpness for professional and home cooks! How Wusthof Knives are Made Wusthof knives are known for their outstanding sharpness. By honing and sharpening the knives yourself you can maintain this feeling for a lifetime of use (see "Honing and Sharpening" section below for detailed guidelines on how to do so). The evolution of a precision forged knife Over 40 different manufacturing steps are needed to produce a forged Wusthof knife from one solid piece of steel. Here you will find a detailed explanation of some of the most important production steps. 1. Sheet bar of high-carbon no-stain steel 2. Precision forged piece 3. Tempered to 58-degree Rockwell 4. Polished 5. Scales of handles and rivets 6. The Wusthof Cook's knife Types of Blades The Right Blade for Every Purpose The edge is the business end of a knife. It is skillfully honed by hand and incredibly sharp. For different cutting tasks different blade shapes and edges are recommended. The Differences: Straight-edge blade: The straight edge allows a smooth and clean cut. When carving no fibres are torn out of the meat. This edge can be used for firm and soft food like meat, vegetables and fruit. Serrated-edge blade: The wavy or serrated edge allows an easy cut through crusty food like a traditional roast and crispy bread. Hollow-edge blade: When cutting an air pocket is created between the hollow edge and the slice. This prevents the food from sticking to the blade and allows for finer slices. Cleaning & Storage Proper care for long-lasting cooking enjoyment If you value your tools, we recommend washing your knives with warm, soapy water after each use. Rinse carefully and dry with a towel. For proper storage we recommend the following options: Knife blocks in a variety of shapes, colors and configurations. The handy knife block provides protection for your blades as well as a visual compliment to your kitchen decor. Magnet Bars in wood, synthetic material or aluminum. Two extra strong magnet segments provide a safe, easily visible and space-saving storage option. Cook's cases in rolls and briefcase styles. This is the ideal method for professionals to store and transport their tools safely. About Wusthof Since 1814 Wusthof has set the standard for designing and manufacturing precision-forged knives. Today the family business is in its seventh generation of ownership, under the management of Harald Wusthof. Wusthof knives are manufactured by a skilled team of 300 dedicated workers in two state-of-the-art facilities in Solingen, Germany. Wusthof applies sustainable practices to their production facilities: Solar panels on the roof provide electricity to their manufacturing facility, they clean and reuse water to reduce water usage, and they reuse scrap materials rather than creating waste. I am a sous chef and I use this knife to break down everything from shell steak to veal chops, and I love it. I also like the flexibility of the blade. It holds an edge very well, with minimum touch ups. Overall I am very happy with the Wusthof line.

Edit 4/6/05: Still using it, still like new, almost 3 years of almost daily use later. Can't beat Wusthof!

I have owned one of these "fillet" knives (7½") for many, many years. Recently I decided that I would give one as a gift. Unfortunately, my knife was at the cabin, and could not remember the brand. I searched online and found it! Rapala brand. The "personal signature, hand-ground stainless steel, and made in Finland" engraved into the blade confirmed that it was indeed, the knife I was searching for.I was thrilled. I placed an order with Amazon.com and in a few days the knife arrived, perfectly packaged and in excellent condition.

As I checked the knife, I was absolutely thrilled with the quality. My old knife was one of the best knives that I have ever owned (It was thrown into tackle boxes, shop drawers, under pickup truck seats, and in kitchen knife holder. It was used for butchering deer, cutting fish bait, filleting fish, and used in the kitchen - works great for slicing tomatoes, potato-chip thin), etc, The new one is almost a carbon copy of the old - and still comes with a leather case. AND, surprisingly, it arrived "sharp enough to shave!"

If you want an excellent all-around, fillet knife, I would highly recommend this one!

I saw the cheap price and read the reviews. After buying and returning Chicago, Henkels, and Ginsu knives from amazon I figured I'd give these knives a chance. They arrived and the block was beautiful. It was professionally constructed and very easy on the eyes. Each knife was sharp and all felt tight in their handles. Not sure why others felt these were cheap quality knives. They are just as strong and sharp, if not sharper than the Chicago and Ginsu I tried. for this low price you cannot go wrong. I am now sold on the cook n home brand.

Review

An inexpensive utility knife suitable for light cutting jobs. I have used it to cut meats, poultry, vegetables, and fruits. The blade is quite thin, so it's easy to hone and sharpen. It holds an edge quite well. Great sidekick to a sturdy chef's knife; when you don't want to pull out the larger knives, and the parer is just too small.

Buy Global G-21 - 6 1/4 inch, 16cm Flexible Boning Knife

Buy Global G-21 - 6 1/4 inch, 16cm Flexible Boning Knife

Product Description

Amazon.com High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global also makes a "heavyweight" line for cooks who prefer hefty knives, its original knives--of which this 6-1/2-inch boning knife with flexible blade is an example--have thinner blades and are lighter than traditional European-style knives. Global also dispensed with bolsters on its original knives to reduce weight. Balance is achieved by injecting a precise amount of sand for a particular blade style into a hollow handle. To ensure balance is continuous, the sand flows inside the handle as a blade is maneuvered. A finger notch between blade and handle provides safety. Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. They carry a lifetime warranty against defects and breakage. --Fred Brack

High-Quality Knives Help Promote High-Quality Results View larger. View larger. View larger. Knife Care Instructions The performance of your knife can be diminished if not cared for properly. Please follow these guidelines to maximize the performance of Mercer's knives: After each use, carefully wash cutlery by hand with warm water and mild- to medium-strength soap; rinse and thoroughly dry it with a soft towel. Cutlery should never be washed in a dishwasher: the intense heat and radical temperature changes may cause the handle to deteriorate; the blade edges will become dull through rubbing against each other; and caustic soap will cause staining and pitting of the blade. Cutlery should not be soaked or submerged for long periods. Chlorine and bleach products discolor and pit stain-free and high-carbon steel. If chlorine or bleach products come in contact with the blade, thoroughly rinse off immediately. Galvanic action--the transfer of electrons from one metal to another--may cause pitting on the blades. To prevent this, avoid long periods of soaking in aluminum pans or a stainless-steel sink, remove cutlery from condiments (such as mayonnaise) stored in aluminum or stainless-steel pans. Always store cutlery in a cutlery block or sheath to preserve the cutting edges and prevent personal injury.

CUSTOMER REVIEW

Review

I had the chance to try cutting with the Mercer's chef knife at a local kitchen store. Compared to the Wüstof and Henckels knives, these Mercer knives are heftier with a bulkier hand grip. At first I did not like the bulkiness of the grip however I did like the weight difference. I would have purchased the knives locally, but the shop was unable to order this knife block set.

Now that I have been using these knives quiet a bit over the past week, it was definitely worth the purchase. I don't even notice the bulkier hand grip now (and it is only bulky by comparison to Wüstof and Henckels). It is my understanding that these knives are commonly used by culinary students and I can understand why. This is a professional product for nearly half the price of other knives in this competition range. In order to keep the blades sharp, I also purchased the Mercer Genesis Collection 10-Inch Honing Steel.

One thing to be aware of with the glass knife block is that the knives are removed by pulling straight up. Of course this is obvious, but unlike other angled knife block sets, cabinet clearance may be an issue for some kitchens. I had not thought of this when originally ordering and at first was disappointed when I thought it would not be possible to store these knives on the counter under cabinetry. However, this is a very sturdy steel and glass knife block. I soon realized the block does not slide when tipped. So whenever I need to remove or return a knife to the block I simply lean it forward without trouble.

Regarding another reviewer's issue with the staining of the bread knife: I have cut bread numerous times so far and have had no issue with staining. I have also used it to cut tomatoes. As for the other knives, I have cut chicken, strawberries, peppers, carrots, garlic, etc. with no issue. I do hand wash the knives directly after use as recommended by the manufacturer.

Overall, I am very pleased with this set.

I read about Kiwi knives on Reddit and then various blogs and decided to try a couple out. They're phenomenal... especially for the price! But the price here, (as of this writing, $13.89 + $6.25 shipping), is a lot more than you need to pay. Look for a Vietnamese grocery store in your area (or Thai or Chinese, probably, too) and you will find a variety of Kiwi knives available for sale. I paid $6 for this knife at a Vietnamese grocery store in Fort Worth, Texas.

Fancy an all-metal set of knives? Tired of cheaply made knife sets made from crappy steel? Is made in America important to you? Not impressed with the cuts you get from "permanent edge" knives?

This set of Rada knives is made in Iowa, and has a knife or tool for almost any task the ordinary cook will face. It feels a little light in the hand at first because the handle is aluminum but the balance is right on. The handle also has a "brushed" finish which helps with the grip

I would definitely recommend this set, and also the "steel wheels" sharpener, which really simplifies a task I've always had difficulty with.

It is shipped in a box that is nice for gift giving and storage.

I bought this knife looking for a decent cordless knife. I thought I finally found it. Worked great filleted like a champ. Went to charge the battery after about half a dozen uses. Cleaned about a 100 fish or so cleans about 20 fish per charge I thought that was great. Put the battery on the charger and now the batteries are either dead or the charger base is bad cause the batteries won't take a charge. And the charger won't light up. Knife is great but something else is built cheap. KNIFE IS NOT WORTH A $100 IN MY BOOK !!!! Maybe $49.99 is what it's worth. My friend at work had one of these so I searched Amazon and of course they carried it! After getting tired of a regular ole steak knife cutting up the inside of my lunch bag I HAD to buy one of these! It works great but as the previous reviewer states, it is SHARP! Be careful with it...I'm kind of nervous using it at work since I use it to cut up apples!

CUSTOMER REVIEW

Review

I was in dire need of a new knife set but I didn't want to spend a ton on one either. So I was shopping around & came across this 16 piece set from Chicago Cutlery. I red all the reviews and decided on this one simply because it had all I needed & I knew it would fit under my cabinets. After I used the knives for a few times I was in love. THey slice like razoe blades through everything we cut up. I did read that these knives would rust so I tried to remeber not to leave them laying in the kitchen sink. I would wash them & dry them right off but 1 night I forgot & left 2 in the sink with no water. Even though there was no water it was still damp & the knives did have a small trace of rust on the edges. It's fixable but I learned my lesson. If you want them to last then take care of them. They are not rust proof so don't be lazy like I was by forgetting to dry them off properly. Other than that these are a great buy!
