I grind my own burgers from roasts so I can have one rare or medium-rare without worrying about that nasty e coli, and I also like to butterfly chicken before grilling it because it makes it much easier to cook it evenly. Both of these tasks are made so much easier with a proper boning knife.



I have a full set of Henkel 4-stars and also some of their very fine Twin-star knives, but this is an exceptional knife for a price of less than $20.00. It was delivered extremely sharp, and the integrated semisoft plastic grip is non-slip, which is very important from the standpoint of safety. In fact, I actually think it is a safer grip than the much more expensive Henkels if you are cutting something wet and messy, as raw meat always is. I would never put a sharp knife in my dishwasher, but this knife is very easy to clean in warm soapy water after using it to cut meat or poultry. I bought this knife because it was the top-rated boning knife in Cooks Illustrated, and as usual, their recommendations are very much on the money. This is my second Victorinox -- the other being a 12" slicer, and both are made from excellent steel with good grips, and are highly stain resistant and easy to clean and sharpen.



I suggest if you are working with something (like poultry) that is very slick, you consider using a washeable kevlar or steel knit glove to grip the surface. This knife came as sharp as any I've ever purchased, and just touching the blade to your skin can cut your skin so finely you can't feel it, and who wants to get even organic poultry or meat drippings on an open wound?



If you are considering a wedding present for someone just starting out who doesn't have a lot of money but wants to work with quality tools, a Victorinox set is a great starter set of knives.

All the five star reviews for this knife are correct, this is a great knife. It is very sharp, and the undulating edge (instead of the fine sawtooth edge of a traditional bread knife) does not drag crumbs out of the bread. At 14" long, the blade also is better at cutting through large loaves.

I've owned these set of knives for approx. 2 months . After reading some negative reviews I was somewhat apprehensive about the product , but for the price I decided to give them a try . I am very impressed with this set. They are well built, sturdy , and very sharp. I have run them in the dishwasher several times and have yet to see any problems . The only problem is that they want to discolor if food is not rinsed off prior to going in the dishwasher ,however, the stain can be removed easily . If I had owned this set for 6 months before reviewing it and still didn't have probs. I would definetly give 5 stars .

This knife is light weight but heavy enough to chop celery without leaving "strings", halve a cabbage or butternut squash. I have other Henckels knives and have found they hold their sharpness longer than other brands I have and when needing sharpening, just a few swipes will restore the original sharpness. This knife fills the spot between paring and cleaver.

Review

Three years ago I bought this little Japanese gem in San Francisco for less than $8.00, and it is the pride of my small-kitchen-knife collection, and beats all European attempts at a knife this size. For an inexpensive knife it is impressively made. What is not advertized clearly is that this blade is a thin splinter of ultra hard carbon compounded steel sandwiched in flexible stainless outer layers, a feature usually costing much more. It was sharp out of the box, but still needs, as all knives do, honing with a ceramic stick after each use, to keep a razor edge. (BTW, those folks who boast that they go years without sharpening should learn to sharpen and hone knives, as you can keep it new-sharp that way, forever) If you have a hand lens you can check out the sandwich construction at the base of the blade where it goes into the handle. Edge retention and utility of this knife is superb ..... a total winner!

I believe the same knife is also sold as Suncraft brand.

I've had my serrated shun knife for almost a year, and it's still as sharp as the day I took it out of it's cardboard sleeve. It's a beautiful knife, as well. As long as you hand wash and dry these knives they will last for decades...if not for generations. My favorite use of this particular knife is slicing tomatoes and onions. You can slice so thin, you can almost see through the slice. Amazing.

I've had expensive German knives for 30 years, but have decided to give them to my son and switch to a complete set of Shuns.

Review

Cleaver is in between a big heavy cleaver and a thin slicing cleaver. I once had a Japanese slicing cleaver that was light and thin and nimble. This looked like it in the pic but when it arrived it was somewhat thicker and heavier. Though it is stout, it is fairly thin and easy to wield. It arrived very sharp. It appears to be nicely made. It feels good in the hand and handles tasks with authority. It works well on the cutting board. It can take on tasks like slicing vegetables, chopping up assorted foods, mincing, and cutting. It's sharp enough for thin slicing and heavy enough to go through tougher thicker slices quickly and easily. I think you could use it to cut up a chicken, dice up some onions, and slice tomatoes. It's a clean, balanced, sharp all-around kitchen knife, and the cleaver blade makes it nice for scooping up cut-up vegetables etc. It's a much better chef's cleaver than the stuff hanging off the racks in the chain stores like walmart etc. It has a well-crafted authentic feel in how it was manufactured, and that is satisfying.

Instead, when you order the classic knives you get the identical ones with the stainless steel handles... I picked up this set because I wanted have an extra paring knife (most-used knife in the kitchen) and bring one to work to cut up an apple now and then. These knives are very pretty and different. They are coated in a colorful, slick material that matches a plastic handle and sheath. This makes the food more or less slide off the blade and the knife edge itself is very nicely sharp.



The sheaths mean that you can drop one of these paring knives into a drawer when you are finished with them--and not worry about running into an open blade as you rummage in a drawer. I normally keep ALL my knives in a block on the counter, but when you buy more knives than you have space for in the block, that's an issue.



For picnics, travel, storing in a work drawer, these are superb and they cut very well. The set of three is handy--one for work, one for the picnic basket and one for the utensil drawer at home. Or keep them in various drawers all over your kitchen so there is always a good paring knife at hand. If you are not superstitious about a gift of knives ("cuts" the friendship) then these make a really excellent gift for anyone.

At 2 cents a knife you can't really be expecting particularly sturdy knives, and an item description of "light weight knives" might be more more realistic, but if you want a large quantity of cheap throwaway plastic knives for a picnic or a party, these will do. Spread mayonnaise on a sandwich? These'll do the job. Cut open an English muffin and spread whipped margarine on it? Sure, if you're careful. Cut up butter? Not quite up to the task. Cut up a pork chop? Nope, not strong enough. So figure out what you're looking for, and then decide accordingly.

This Chinese vegetable knife is perfect for making repetitive thin slices. It's thin, sharp blade is allows precise vertical cuts, and the high-quality steel holds it's edge well. The handle is comfortable and easy to grip, and the balance is good. Note: it is not stainless steel: rinse and wipe it dry after each use - vegetable acids will eventually turn ithe blade an attractive black, and seal the surface. I like this knife (cleaver is a misnomer) well enough that I bought 4 more to give to friends and relatives who like to cook. Note: sharpen only one side as you use it (same side as the hand that holds it) and the precision of your cuts will improve.

These things are all kinds of genius! I am an Executive Assistant. Cutting up cakes for Birthdays, retirements, holidays, etc is practically one of my job responsiblities.
