I bought Victorinox's chef knife and was very satisfied, however I wanted another knife better suited for meats. I bought this knife to satisfy that need and I am not disappointed. This knife is absolutely amazing. My wife is scared to use it because it is so sharp. We hand dry it and put it away immediately because of the damage this thing could do. It's shape is great, the large handle feels sturdy and comfortable, and of course it slices through meats like butter. Sharpest knife I've ever owned period.

i bought this as a gift for my wife. she had been using an old Taiwan made chinese chef's knife. The thing required constant sharpening after every use and didn't even sharpen so well. I finally got her this knife and she loves it. It holds its edge well and we don't need to re-sharpen it so often. It has nice balance and is so sharp you could shave your arm hair with it. Like many kitchen workers in the industry, I've kicked around my fair share of knives. For the longest time, I had been a fan of more expensive knives, paying for what I perceived as quality, durability, and usability. This knife, however, outshines all others in my knife roll. I had this knife, along with three other french knives, professionally sharpened over two years ago--and despite the fact that this blade has taken the most (daily) abuse in the kitchen over all other knives I own, it has held it's edge to what has been described as "nearly dangerously sharp" with only regular honing on a standard steel. I even regularly use this knife to disarticulate chicken carcasses, cutting through bone without so much as the smallest nick to the edge. What's more, the half-bolster design allows you to use, hone and sharpen the ENTIRE blade--full bolsters, in my opinion, are a major design flaw that is standard on many of the more expensive (*achem* German) knives. What are the different knife edges and what do they do? Straight: The vast majority of Victorinox knives come with a straight or fine edge. This means it has a perfect taper along the blade and no serrations. It is designed to cut without tearing or shredding. Serrated: An edge designed with small, jagged teeth along the edge. Scalloped: A blade with waves along the edge generally used to cut breads with a hard crust and soft interior, as well as tougher-skinned fruits and vegetables. Granton: This edge has hollowed-out grooves or dimples on the sides of the blade. These grooves fill with the fat and juices of the product being cut, allowing for thin, even cuts without tearing. Even with the grooves, these are still straight-edge knives and can be honed with a sharpening steel. How should I care for my cutlery? After use, knives should not be allowed to soak in water. The best practice is to hand wash and dry them immediately. This is especially true if they have been used on fruit or salty foods, which may cause some staining, even on stainless steel. Most knives require very little maintenance and it is worth the effort to protect your investment. Though Victorinox knives are dishwasher safe, this is strongly discouraged. The dishwasher’s agitation may cause damage. Additionally, harsh detergents can be harmful and cause pitting and spotting on the blades. The handles may also discolor and develop a white film with constant use of the dishwasher. Plus, intense heat associated with dishwashers is not good for the temper of the blade. How do I keep my knives sharp? All quality knives require proper maintenance to keep them in perfect cutting shape. The best of edges will quickly dull if it strikes metal, glass, or Formica. A wooden cutting board makes the best cutting surface. And, if a slip occurs, a proper cutting board is safer for the user. Frequent use of a Victorinox sharpening steel will keep blades in tip top working condition. All straight-edge knives need steeling to keep their edges. How to "Steel" a Knife 1. Hold the steel firmly in your left hand with the guard positioned to stop the blade should it slip. 2. Hold the knife in your right hand and place on top part of steel as shown. 3. Raise back of blade one-eighth inch. 4. Now, moving the blade only, draw it across the steel in an arching curve, pivoted at your wrist. The blade tip should leave the steel about two-thirds of the way down. 5. Repeat the same action with the Blade on the bottom side of the steel. Always maintain the same pressure and angle on both sides of the steel. 6. Repeat five or six times. When a sharpening steel no longer does the job, it’s time to take the knife to a qualified knife sharpener who will place a new edge on it. This, along with use of the sharpening steel, will give you many years of sharp, safe blades. Please note that electric knife sharpeners can be harmful. They have to be used carefully as they remove too much metal, can harm the temper of the blade, and most important can change the factory-applied edge angle. How should I store my knives? Safety is the biggest concern of storage, both to the user and to protect the knife's edge. Choices include a knife magnet, knife block, drawer insets, and also individual knife protectors.

For those that were curious like me, this is the same knife as the Victorinox Swiss Army 8-Inch Fibrox Straight Edge Chef's Knife but with the wood handle instead of the fibrox handle.



The reason I chose this knife was because I preferred the wooden handle over the fibrox handle, it just looks nicer.



For some reason, it was very difficult to see if they were the same blade since the fibrox knife had the huge ratings and what not. I went on their website and both knifes had the same specifications with the blade.



So I hope i help some of you that were frustrated as i was.

FACTS: The net weight is aproximately 315 grams. The overall length is 307.5mm. The blade itself is 202.7 mm long, by 83 mm. high (i.e. from sharp edge to spine), by 2.5 mm thick at the spine, tapering to aprox 2mm at midpoint between spine and cutting edge. The handle is 104.8mm long, and has a maximum diametre of 30mm. The short round lightweight handle is composed of 2 parts: an inner molded plastic with tight fitting, hard rubbery outer sleeve. The balance point when placed on a fulcrum is aprox 65mm into blade (counting from the handle).



PROS: Arguably, the blade's high carbon stainless steel is the strong point of the knife.* The handle is sanitary and provides a secure grip. Good overall value.



CONS: The overall balance leaves much to be desired, which seems to be due to the long heavy blade and short lightweight handle. Also, the blade height is somewhat dissappointing, because the versatility of a traditional chinese professional chef's knife lies in its deep squared off shape. A shorter but higher blade with a heftier longer handle would be more balanced, proportionaly appropiate for a chinese chef knife -and more adequate size for home use.



* by using and sharpening for a few months, I have formed an idea of the blade's sharpness retention, which in my end user point of view is more than adecuate for demanding home kitchen use. But it's worth stressing that I'm not a qualified expert.

I have several of these knives....bread knife, paring, slicing. I love the quirky colors, they make me giggle....

Good GRAVY this knife is amazing! Upon unpackaging it, the first thing my wife and I did was try it out on the vegetable (fruit?) it is most well-suited for: a tomato. We were shocked at how sharp the blade is, and how literally effortless it was to cut slice after paper-thin slice of tomato without so much as squishing out a single seed or bit of inside goop! No joke. We cut a Roma Tomato into a couple-dozen perfect, papery-thin slices. I would say that the blade glided through the tomato easier than a hot knife through butter.



Next, to test out how "non-porous" the ceramic blade was, we took it and cut an entire habanero pepper into thin slices. Then we simply rinsed it under hot water, and went back to the tomato again. There was no detectable residue of the habanero when I ate the tomato slices that we cut directly after rinsing. Impressive.



Now it is true, the micro-serrations are really best for cutting waxy-skinned fruits and vegetables that have soft insides. So in addition, we bought some of the other Kyocera Ceramic knives for other purposes too. But I would say that this knife is now part of our regular meal preparation literally almost daily. We love it!

I purchased this three piece paring knife set in addition to a more expensive Henckels paring knife J.A. Henckels Twin Four Star 3-Inch High Carbon Stainless Steel Paring Knife. This set is good quality. Stamped on the blades are the words "German Stainless Steel" and "Made in China". They have a good sharp edge and a textured, shaped plastic handle that provides a good grip. The package says that the knives are "stamped one-piece blade construction for strength and durability". It also says that the handles are "fully closed polypropylene", "breakproof, dishwasher safe, and hygienic." They are lightweight and have a nice finish on the blades.
