Review

In Chinese kitchens, we don't have a plethora of specialty knives, each with a specific purpose. You don't need to either. There is a myth out there that a good kitchen has to have expensive cookware and knives. In the pioneer days, all that they had was a couple of pieces of cast iron. All that you really need are a Texsport Cast Iron Kit that you can buy at any sporting goods or hardware store, simple saute pans and stock pots from a restaurant supply, a Joyce Chen 21-9972, Classic Series 4-Piece Carbon-Steel Wok Set or 14 Inch Traditional Cast Iron Wokset, and this knife.

At Chinese tables, you never see a knife. Every piece of food is served prepared in bite size pieces. Even the toughest pieces of meat can be cut to a bite size piece, flash seared over high heat in a wok, served tender, juicy, full of flavor, and easy to pick up with chopsticks. Almost all prep work done in a Chinese kitchen is with this cleaver. Ask Martin Yan. The flat side of the blade can be used for smashing ginger and garlic. It slices. It dices. It collects gambling debts from your dead beat brother-in-law.

Well made. Well balanced. Good grip. Comparable to Dexter-Russell Chinese Cleaver (8" x 3 1/4).
